Recipe: homemade falafel burgers

Veggie burgers are full of nutrition and a great way to ditch the calories whilst enjoying some delicious nosh (despite what diehard carnivores might tell you).

Plus, it’s easy! This recipe takes just 10 minutes to prepare and 10 minutes to cook. We suggest accompanying it with pitta bread for the ultimate Middle-Eastern experience:

250g chickpeas
1 medium onion, finely chopped
2 garlic cloves, crushed
2 tsp ground coriander
2 tsp ground cumin
1 tsp harissa paste or chilli powder (optional)
handful of flat-leaf parsley or curly parsley
2 rounded tbsp plain flour
2 tbsp vegetable oil
4 buns/pitta breads, cut in half
100g hummus to serve
watercress/tomato salsa to serve

  1. Drain and rinse chickpeas before adding into a food processor, along with the onion, garlic, flour, herbs and spices.
  2. Blend until smooth and use your hands to shape four burgers.
  3. Heat the oil in a large pan and fry each burger for three minutes on each side until they are golden in colour.
  4. Spread the hummus into the buns/pittas before adding the falafel burgers and topping with watercress/tomato salsa.
